BEEF WELLINGTON PIE

Preparation Method :

  • Heat the oil in a large saucepan over high heat. Season the beef with salt and pepper and saute until browned, about 5 minutes.
  • Add the flour, stock, and thyme. Cover, and simmer until very tender, 3 hours.
  • Preheat the oven to 400°F (200°C/gas 6). Melt the butter in a frying pan over medium heat. Add the shallots and garlic and sauté until softened, 5 minutes.
  • Add the mushrooms and brandy and sauté until the pan is dry. Place a heaped teaspoon of mushroom on each slice of ham and roll up. Spoon the beef into a pie dish. Add the ham rolls.
  • Brush the edge of the pie dish with beaten egg, cover with pastry, trim to fit, and cut an air vent. Bake for 45 minutes, until golden brown. Serve hot.

  • 2 tablespoons sesame oil
  • 2 kg braising steak, cut into chunks
  • Salt and freshly ground black pepper
  • 5 tablespoons flour
  • 1 liter beef stock
  • 2 tablespoon fresh thyme
  • 4 tablespoons butter
  • 4 shallots, finely chopped
  • 4 cloves garlic, sliced
  • 5 tablespoons brandy
  • 500 grams Portobello mushrooms, finely chopped
  • 15 thin slices Parma ham
  • 2 large eggs, beaten
  • 500 grams sheet ready-rolled puff pastry
