FAMILY POT ROAST

Preparation Method :

  • Heat the oil in a heavy-based pan. Season the beef with salt and pepper and fry until golden brown on all sides. Remove from the pan and put to one side.
  • Pour the stock and wine into the same pan. Bring to the boil, scraping the sediment from the base of the pan. Pour into a clean saucepan and bring to the boil.
  • Arrange the vegetables, thyme and garlic in a steamer compartment and season to taste. Place the joint of beef on top.
  • Cover the steamer with a tight-fitting lid and steam over the boiling stock for 1 hour 45 minutes. Check the liquid level frequently and add more boiling stock if necessary.
  • Add the mushrooms, and continue cooking the beef for a further 20 minutes. Serve the meat on a warmed dish surrounded by the vegetables.
  • Remove the pan from the heat and skim off all fat from the surface of the stock, then boil to reduce until syrupy.
  • Serve separately.

INGREDIENTS

  • 4 tablespoons Cooking oil
  • 2 kilograms topside or silverside of beef, rolled and tied
  • Salt
  • Freshly ground black pepper
  • 2 liter beef stock
  • 300 ml red wine
  • 4 onions, peeled and quartered
  • 15 small carrots, scrubbed
  • 15 small turnips, peeled
  • 2 small Swede, peeled and cubed
  • 2 teaspoon chopped fresh thyme
  • 6 cloves garlic, peeled and crushed
  • 750 grams cap mushrooms, wiped
