POT ROAST SILVERSIDE OF BEEF PORTUGUESE

Preparation Method :

  • Preheat the oven to Gas Mark 4/180°C/350°F.
  • Dredge the silverside in the seasoned flour, heat the dripping in a large frying pan and brown the meat all over.
  • Place the beef in a large casserole with a lid.
  • Add the rest of the ingredients, cover and pot roast in the centre of the oven for 3 hours.
  • Transfer the silverside to a warm serving dish and then slice it thin
  • Spoon the juice and other ingredients over the beef, and serve.

INGREDIENTS

  • 1.5 kg silver side of beef, boned and rolled
  • Seasoned plain flour
  • 50 grams beef dripping
  • 2 cloves garlic, peeled and crushed
  • 6 anchovies, crushed
  • Juice of 1 lemon
  • 200 grams chopped tomatoes
  • 1 tablespoon tomato puree
  • Salt and freshly ground black pepper (to taste)
  • 125 grams pitted green olives, washed and sliced
  • 2 red peppers, de-seeded and sliced
  • 175 ml Basic Beef Stock
