Preparation Method :

  • Place the meat on a piece of foil large enough to wrap around it.
  • Spread the top with half the garlic and sprinkle with half the soup mix and a little mustard, patting the flavorings in with a broad-bladed knife.
  • Turn over and repeat on the other side.
  • Wrap the meat loosely in the foil, sealing the edges well, and place in a roasting pan. Roast in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 1 hour 40 minutes.
  • Carefully unwrap the meat and transfer to a warmed platter. Pour the juices that have collected back into the pan and add enough hot water to give good gravy.
  • Reheat, add salt and pepper to taste and pour into a sauceboat. Carve the meat in thin slices.
  • Serve with the gravy, jacket-baked potatoes cooked in the oven at the same time, and green peas.
  • Serve Hot.
