The oxtail with sausages is packed with juicy elements. This dish is perfectly fine for lunch or dinner because of its appetizing ingredients like white wine, beef dripping, pork sausages, bouquet gami and other seasonings. With its sausages, you can never resist its every bite.

30 minutes

Cooking Time :
4 hours 30 minutes

Preparation Method :

  • Blanch the oxtail pieces in boiling water for 5 minutes.
  • Heat the dripping in a large flameproof casserole, add the oxtail pieces and simmer for 15 minutes with the casserole lid on.
  • Add the beef stock, wine and bouquet garni, cover, and simmer for 3 hours.
  • Brown the Cumberland sausages in a separate pan.
  • Skim the fat off the oxtail casserole, add the sausages, season it to taste and braise gently over a low heat for further an hour.


  • 2 oxtails (ask your butcher to chop them into pieces)
  • 50 grams beef dripping
  • 570ml Basic Beef Stock
  • 150ml dry white wine
  • 1 bouquet garni
  • 900 grams Cumberland pork sausages
  • Salt and freshly ground black pepper (to taste)
