Preparation Method :

  • Place the sausage in a saucepan, cover with water, bring to the boil and simmer to low flame for about 20 - 25 minutes.
  • Salad: Boil the potatoes in water with a pinch of salt for 20 minutes or until tender. Drain and set it aside to cool. Cut into thick slices and place in a bowl.
  • Place vinegar, mustard, salt and black pepper to taste in a small bowl and whisk to combine. Slowly whisk in oil and continue to whisk to make a thick dressing.
  • Pour dressing over warm potatoes, sprinkle with parsley and spring onions. Toss gently to combine and spoon onto a serving platter.
  • Skin sausage, cut into thick slices and arrange on platter with salad. Serve with extra mustard, dill pickle and crusty bread.


  • 1 large spicy German or Dutch smoked sausage

Potato Salad

  • 100 ml olive oil
  • 4 large, old potatoes, scrubbed and halved
  • 2 tablespoon wine vinegar
  • 1 tablespoon Dijon mustard
  • 3 tablespoon finely chopped fresh parsley
  • 4 spring onions, finely chopped
  • Freshly ground black pepper and Salt, to taste
