The beef with thyme, orange and red wine is combined with juicy ingredients like beef dripping, streaky bacon, potatoes, Swede, stewing beef, good-quality wine and other appetizing seasonings. With red wine, fresh thyme and orange, the dish appears more tasty and tempting.

Preparation Time :
30 minutes

Cooking Time :
4 hours 20 minutes

Preparation Method :

  • Preheat the oven to Gas Mark 2/150°C/300°F.
  • Heat the dripping in a large flameproof casserole and fry the meat with the bacon until browned all over.
  • Add the onions and garlic, and cook for 5 minutes.
  • Add rest of the ingredients and bring to boil.
  • Cover, place it in the centre of the oven to simmer for 4 hours, and serve.


  • 25 grams beef dripping
  • 900 grams stewing beef (fat and gristle removed), diced
  • 100 grams rind less smoked streaky bacon, cubed
  • 2 large onions, peeled and sliced
  • 3 cloves garlic, peeled and crushed
  • 500 grams potatoes, peeled and diced
  • 225 grams Swede, peeled and diced
  • Juice and zest of 2 large oranges
  • 6 tablespoon orange Curacao
  • 4 sprigs of fresh thyme
  • Salt and ground black pepper (to taste)
  • 150 ml Basic Beef Stock
  • 275 ml good-quality red wine
