Preparation Method :

  • Fill a large pot with cold water. Add the onions, celery, carrot, peppercorns, and salt. Bring to a boil over medium-high heat.
  • Add the beef, and when the water has returned to a boil, decrease the heat a little and cover. Simmer for 1 hour.
  • Add the veal, chicken, and tongue. Simmer for 1 hour, adding boiling water to cover the meats. Add the potatoes and remaining carrots.
  • Simmer until the meat and potatoes are very tender, about 1 hour.
  • Cook the sausage separately following the instructions on the package. Drain and serve the meats and vegetables on a large heated serving platter.


  • 4 medium onions, studded with 8 cloves

  • 10 large carrots, cut in chunks
  • 30 black peppercorns
  • 4 tablespoons coarse salt
  • 3 kg boneless beef
  • 2 kg boneless veal

  • 750 grams sausage
  • 10 large potatoes, halve
