Always in a hurry? No time for cooking? Beef consommé dish is advisable for those always on go. In just span of time a nutritious and classic dish is in your table. This dish is a budget friendly. Lean beef is a good source of zinc , b12 and other vitamins. So add this in your recipe list.

Preparation Method :

  • Place the beef stock and Madeira in a large saucepan and heat gently for 10 minutes.
  • Add the whites of egg and the shells to the beef stock, and whisk over the heat until the mixture begins to boil.
  • When the mixture boils, remove the pan from the heat and leave it to subside for 10 minutes.
  • Repeat this process three times.
  • This allows the egg white to trap the sediments in the beef stock to clarify the soup.
  • Let the consomme cool for 5 minutes.
  • Carefully place a piece of fine muslin over a clean saucepan and strain the soup into it.
  • Repeat this process twice, then gently reheat the consomme, season, taste and serve.


  • 1.75 litres Rich Beef Stock
  • 150 ml Madeira 
  • Whites of 6 eggs plus the shells 
  • Salt and freshly ground black pepper
