BRAISED VEAL SWEETBREADS

You can now prepare the best dish for family because there is the Braised Veal Sweetbreads that is mainly made of highly nutritional ingredients. This can prepare for about thirty minutes and can serve for about four people.

30 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Soak and then blanch the sweetbreads for 1 minute. Cool them and press them to remove  the excess water.
  • Melt the butter in your pressure cooker and brown the sweetbreads for 7 minutes.
  • Add the onion and carrot, both diced, and the bouquet of garni.
  • Add the veal stock. Season. Close and cook for 15 minutes, from the pressure cooker start  hissing.
  • After cooking, put the sweetbreads on a hot platter. Bind the sauce with the potato flour mixed with little cold water. Bring to a boil, and reduce  for 7 minutes. Correct the seasoning and pour the sauce over the sweetbreads.

  • 1 kg sweetbreads 
  • 50 grams butter 
  • ½ litre veal stock 
  • 1 carrot 
  • 1 onion 
  • 1 bouquet of garni 
  • 1 teaspoon potato flour 
  • Salt
  • Pepper
