Preparation Method :

  • Grease ovenproof dish (2.25 litre/9 cup capacity). Boil, steam or microwave potato until tender; drain, cut potato into 5mm slices.
  • Boil, steam or microwave spinach until just tender; drain, rinse.
  • Heat butter and oil in pan, add veal and garlic, cook until browned all over.
  • Place veal into prepared dish, top with spinach and potato slices, sprinkle with pepper and half the cheese.
  • Pour tomato sauce around veal, sprinkle veal with remaining cheese.
  • Cover, bake in moderately hot oven 20 minutes, remove cover, bake further 10 minutes or until heated through.
  • Tomato Sauce: Heat oil in pan, add remaining ingredients, simmer, un-covered, 10 minutes.



  • 300 grams potato, peeled, chopped
  • ½ bunch English spinach
  • 50 grams butter
  • 1 tablespoon peanut oil
  • 4 veal steaks
  • 1 clove garlic, crushed
  • ½ teaspoon seasoned pepper
  • 25 grams grated parmesan cheese

Tomato Sauce

  • 5 grams pimiento-stuffed green olives, sliced
  • 50 ml dry red wine
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon sugar
