Preparation Method :

  • Place onions and garlic with 100 grams of butter into a microwavable bowl or jug, cover and cook on High for 4 minutes.
  • Add chicken livers, parsley, thyme, bay leaf and brandy or port to onion mixture, cover and cook for 2 minutes.
  • Stir well, recover and cook on Medium for 3 minutes or until livers are just cooked - they should still be pink inside.
  • Remove bay leaf. Place liver mixture in a food processor and process to make a rough pate. Spoon pate into a small serving bowl.
  • Place remaining butter in a small microwavable bowl and melt on DEFROST for 1 minute or until butter is melted.
  • Pour butter over top of pate and chill until required. Serve pate with toast or crispbread and vegetables.


  • 2 onions, diced
  • 2 cloves garlic, crushed
  • 150 grams butter
  • 500 grams chicken livers, trimmed
  • 4 sprigs fresh parsley
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 2 tablespoons brandy or port warm toast or crisp bread
  • Selection of raw vegetables such as cherry tomatoes, celery sticks, carrot sticks, broccoli florets, cauliflower florets and green beans
