MARMALADE SPONGE PUDDING

Cooking Time :
3 minutes

Preparation Method :

  • Thoroughly grease a 3 cup pudding basin. Sift the flour into a bowl and toss in the sugar. Finely rub in the butter or margarine.
  • Mix to a soft consistency with the egg, milk and vanilla essence. Put the marmalade in the prepared basin. Heat, uncovered, on Full for about 20 - 25 seconds.
  • Spoon in the pudding mixture. Cook, uncovered, on Full for 2 minutes or until the pudding is well risen and spongy-looking.
  • Allow to stand for 1 minute. Turn out on to a plate and eat with cream, ice cream or custard.

INGREDIENTS

  • 50 grams self-raising  flour
  • 2 tablespoons castor sugar
  • 2 tablespoons butter or margarine
  • 1 large egg, beaten
  • 2 tablespoons cold milk
  • ½ teaspoon vanilla essence
  • 2 tablespoons marmalade
  • Ice cream to serve
