Turkish Aubergine Dip is one of the scrumptious foods that can be served at hand! The first thing that you must do is to prepare for its ingredients as follow; caster sugar, large lemon, olive oil, salt and tomato wedges and pepper strips! This is a perfect dish to serve to your family!

Preparation Time :
15 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Top and tail the aubergines a halve them lengthways. Arrange them on a large plate, cut sides down and cover with kitchen paper.
  • Cook Full for 8 - 9 minutes or until soft. Scoop the flesh out of the skins directly into a food processor and add the remaining ingredients.
  • Process to a semi-smooth puree. Pile into a serving dish and garnish with olives, red per and tomato wedges.


  • 2 tablespoon olive oil 
  • Juice of 1 large lemon 
  • Salt to taste 
  • ½ teaspoon castor (superfine) sugar
  • Black olives, red (bell) pepper strips and tomato wedges, to garnish
