JELLIED MEDITERRANEAN SALAD

Jellied Mediterranean Salad is perfectly made and is blended with ingredients which include pepper, capers, gherkins, red wine, tomato juice, anchovy sauce, olives, red wine, gelatin and vegetable stock! It can be a delectable dish to prepare for the entire family!

Preparation Time :
35 minutes

Cooking Time :
5 minutes

Preparation Method :

  • Place the pepper strips in a bowl and cover with boiling water. Leave for 5 minutes to soften, then drain.
  • Pour 3 tablespoons of the stock in a bowl. Stir in the gelatine. Allow to stand for 20 minutes. Melt, uncovered on Defrost for 3 minutes.
  • Stir in the remaining stock with the tomato juice and wine. Cover when cold, then chill until just beginning to thicken.
  • Stir the tomatoes and pepper strips into the setting jelly with all the remaining ingredients.
  • Transfer to a 6 cups wetted jelly mould. Cover and chill for 3 - 4 hours or until firm.
  • To serve, dip the mould in and out of bowl of hot water to loosen, then run a hot wet knife gently round the sides.
  • Invert on to a wetted plate before serving.

INGREDIENTS

  • 300 ml cold vegetable stock
  • 1 tablespoon powdered gelatine
  • 3 tablespoons tomato juice
  • 3 tablespoons red wine
  • 1 green (bell) pepper, seeded and cut into strips
  • 2 tomatoes, blanched, skinned and chopped
  • 2 tablespoons drained capers
  • 50 grams chopped gherkins 
  • 10 stuffed olives, sliced
  • 3 teaspoons anchovy sauce
