SPICY THAI PRAWNS

Preparation Method :

  • Place spring onions, garlic, ginger and oil in a microwavable casserole, cover and cook on High for 1 - 2 minutes.
  • Add lime rind, lime juice, lemon grass, fresh coriander, coriander root, chili, coconut milk and stock, cover and cook for another 2 minutes.
  • Place prawns around edge of casserole and place snow peas in centre.
  • Cover and cook on Medium for 1 minute, stir carefully keeping prawns to the outside and snow peas in the centre, then cook for further 1 minute.
  • Stir again and cook for 1 - 2 minutes or until prawns change colour and are cooked.

INGREDIENTS

  • 500 grams uncooked prawns, shelled and deveined and halved lengthwise
  • 125 ml coconut milk 
  • 6 spring onions, sliced diagonally
  • 1 clove garlic, crushed
  • 1 teaspoon finely chopped fresh ginger
  • 2 tablespoon peanut oil
  • 1 teaspoon finely grated lime rind
  • 1 tablespoon lime juice
  • 1 stalk fresh lemon grass, thinly sliced 
  • 1 tablespoon chopped fresh coriander
  • 1 teaspoon finely chopped fresh coriander root
  • 1 fresh red chili, thinly sliced
  • 125 ml vegetable stock
  • 50 grams snow peas
