Preparation Method :

  • Place all the ingredients except the nuts in a 7 cups dish. Cook, uncovered, on Full for 10 - 15 minutes, stirring with a wooden spoon 4 times.
  • Remove from the microwave, then stand in the sink with enough cold water to come half-way up the outside of the dish.
  • Leave to stand for 10 minutes, then lift out and wipe the base and sides dry.
  • Add the walnuts with almonds and beat the candy vigorously for several minutes until it starts to lighten in colour.
  • Thoroughly butter a shallow round, square or oval 5 cups dish.
  • Spread the mixture into the prepared dish and leave to set.
  • Remove from the dish by lifting with a knife, then break the candy into pieces. Store in an airtight tin or jar.


  • 1 teaspoon finely grated orange peel
  • 50 grams honey
  • 2 tablespoons butter     
  • 300 grams light soft brown sugar
  • 1 teaspoon finely grated orange peel
  • 150 ml milk
  • 1 teaspoon vanilla
  • 50 grams almonds, coarsely chopped
  • 50 grams almonds in their brown skins, Rinsed and Toasted
