RED CABBAGE WITH WINE

Red Cabbage with Wine is an extraordinary dish that comes from the microwave! It can give you a sense of fulfillment because of its potent ingredients which include red win, soft brown sugar, onions, apples, caraway seeds, corn flour and malt vinegar!

50 minutes

Preparation Method :

  • Put the shredded cabbage into a 9 cup dish. Add half the boiling water and 1 teaspoon of the salt.
  • Cover and cook on Full for 10 minutes, turning the dish 3 times.
  • Stir well, then mix in the remaining wine and boiling water and remaining salt, the onions, apples, sugar and caraway seeds.
  • Cover with clingfilm (plastic wrap) and slit it to allow steam to escape.
  • Cook on Full for 20 minutes, turning the dish 4 times. Remove from the microwave.
  • Mix the cornflour smoothly with the vinegar and cold water.
  • Add to the hot cabbage and mix well. Cook, uncovered, on Full for 12 minutes, stirring 4 times. Leave until cold before chilling overnight.
  • To serve, recover with fresh clingfilm and slit it to allow steam to escape, then heat on Full for 6 minutes before serving.
  • Transfer a portion to side plates and cover each with kitchen paper, then reheat individually on Full for 1 - 2 minutes each.

INGREDIENTS

  • 2 tablespoons light soft brown sugar
  • 1 kg red cabbage, trimmed and finely shredded
  • 250 ml red wine  
  • 250 ml boiling water
  • 3 onions, finely chopped
  • 3 cooking apples, peeled and grated
  • ½ teaspoon caraway seeds
  • 2 tablespoons corn flour
  • 3 tablespoons malt vinegar
  • Salt to taste
  • 1 tablespoon cold water
