BASIL NOODLES WITH BAKED TOMATOES

Preparation Method :

  • Preheat the oven to 180°C/350°F/Gas 4. Halve the tomatoes and toss them with the salt and sugar. Spread them out in a baking tray and bake for about 1 hour or until they have collapsed. Leave to cool.
  • Cook the noodles in boiling water for 5 minutes or according to packet instructions. Drain well and keep warm.
  • Put the basil in a blender or food processor and blend in enough olive oil to make a paste. Add this to the noodles and stir until they are evenly coated. Season generously with black pepper and salt to taste.
  • Spoon the tomatoes over the noodles. Sprinkle with Parmesan shavings, and serve.

INGREDIENTS

  • 250 grams plum tomatoes
  • 2 teaspoon salt
  • 2 teaspoon caster sugar
  • 250 grams egg thread noodles  
  • 50 grams fresh basil
  • 4 teaspoon sesame oil
  • Salt and freshly ground black pepper
  • Parmesan shavings, to serve
