Preparation Method :

  • Cook the noodles in boiling water for 5 minutes or according to packet instructions. Drain well and set aside.
  • Melt the beef marrow in a wok or large open pan over a moderate heat. Add the shallots and stir-fry for 1 minute or until the shallots soften.
  • Add the sherry and bring to the boil. Immediately add the noodles and parsley, and use two spoons to lift and stir until the noodles are evenly coated and hot through.
  • Season generously and serve immediately, garnished with lemon wedges and chopped chives.


  • 250 grams medium egg noodles
  • 100 grams beef marrow
  • 6 shallots, sliced               
  • 6 tablespoon dry sherry
  • 4 tablespoon chopped fresh parsley
  • Salt and freshly ground black pepper

To Garnish

  • Lemon wedges
  • 4 tablespoon chopped fresh chives
