Preparation Method :

  • Heat the oil in a wok or large open pan. Stir-fry the spring onions, garlic, ginger and star anise over a moderate heat for 1 minute.
  • Add the steak and beans, stock, soy sauce and sherry and bring to a gentle boil. Add the pak choi and simmer for 4 minutes.
  • Meanwhile, cook the noodles in plenty of boiling water for 4 minutes or according to packet instructions. Drain.
  • Divide the noodles among the serving bowls and ladle the beef stew over them. Serve immediately, accompanied by chilli oil to be added according to personal taste.


  • 2 tablespoon sesame oil
  • 6 spring onions, sliced
  • 2 garlic clove, crushed
  • 1 inch piece root ginger, shredded
  • 2 star anise
  • 500 grams sirloin steak, cut into strips
  • 150 grams French beans, halved
  • 1.5 litres beef stock
  • 2 tablespoon soy sauce
  • 4 tablespoon dry sherry
  • 150 grams pak choi, shredded
  • 300 grams Chinese flat wheat noodles or flat rice noodles
  • Chilli oil, to serve
