Preparation Method :

  • Slice the beef across the grain into strips. Put into a bowl with the ginger, garlic, oyster sauce, soy sauce and chilli oil. Season with salt and pepper and leave to marinate for 30 minutes.
  • Cook the noodles in plenty of boiling water for 5 minutes or according to packet instructions. Drain well and keep warm.
  • Heat the sesame oil in a wok or large open pan, add the spring onions and green pepper and stir-fry for 30 seconds.
  • Add the beef and its marinade and stir-fry over a high heat for 4 minutes. Taste and adjust the seasoning. Serve hot, spooned over the noodles.


  • 500 grams topside beef
  • 2 tablespoon freshly grated root ginger
  • 5 garlic cloves, finely sliced
  • 5 tablespoon oyster sauce          
  • 4 tablespoon soy sauce
  • 2 teaspoon chilli oil         
  • Salt and freshly ground black pepper
  • 500 grams Chinese flat wheat noodles  
  • 4 teaspoon sesame oil
  • 4 spring onions, chopped
  • 2 large green pepper, chopped
