CANTONESE OYSTER NOODLES

Preparation Method :

  • Pour boiling water over the noodles to cover them and leave to stand for 3 minutes or according to packet instructions. Drain and rinse, then drain again well. Keep warm.
  • Heat the oil in a wok or large open pan and stir-fry the spring onions and garlic over moderate heat for 1 minute.
  • Add the oysters and sherry and stir-fry over a high heat for 1 minute. Stir in the soy sauce. Spoon the oysters over the noodles and serve.

INGREDIENTS

  • 200 grams egg thread noodles
  • 3 tablespoon sesame oil
  • 5 spring onions, finely sliced
  • 4 garlic cloves, crushed 
  • 25 fresh oysters, shelled
  • 5 tablespoon dry sherry
  • 2 tablespoon light soy sauce
