CHAR SUI NOODLES

Preparation Method :

  • Combine the soy sauce, honey, garlic, sherry, hoisin sauce, oyster sauce, sugar, oil and star anise. Cut the pork fillet in half lengthways and smear with the soy mixture, rubbing it well into the meat. Leave to marinate for up to 1 hour.
  • Preheat the oven to 220°C/425°F/Gas 7. Place the pork in a small roasting tin and roast for 4-8 minutes.
  • Baste with the pan juices and return to the oven. Reduce the temperature to 180°C/350°F/Gas 4 and roast for a further 4-8 minutes or until the pork is just cooked in the centre, but still moist.
  • Meanwhile, cook the noodles in boiling water for 5 minutes or according to packet instructions. Stir the spinach and spring onions into the boiling water with the noodles, then drain and keep warm.
  • Brush the pork with any remaining marinade, then slice neatly, using a very sharp knife.
  • Divide the cooked noodles and spinach among the serving plates and top with the slices of pork. Garnish with coriander and serve.

  • 2 tablespoon honey       
  • 2 garlic clove, crushed
  • 2 tablespoon dry sherry               
  • 4 tablespoon hoisin sauce
  • 3 tablespoon oyster sauce
  • 2 tablespoon caster sugar
  • 4 tablespoon sesame oil
  • 2 teaspoon star anise seeds, crushed    
  • 400 grams pork fillet, in one piece
  • 300 grams flat rice noodles
  • 200 grams spinach or pak choi, finely shredded
  • 2 spring onions
  • Fresh coriander, to garnish
