Preparation Method :

  • In a pestle and mortar or spice grinder, grind together the chillies, chilli sauce, coriander, garlic and 2 tablespoon of the oil.
  • Rub this paste all over the beef, pressing well into the flesh. Leave to marinate for up to 1 hour.
  • Heat the remaining oil in a wok or frying pan and fry the shallots until golden and crisp. Drain on kitchen paper.
  • Pour boiling water over the noodles and leave to stand for 3 minutes. Drain and keep warm.
  • Heat a wok or large open pan to searing temperature. Put the beef into the wok and press down with a fish slice or spatula.
  • Cook for 5 minutes, then turn and cook the other side for 5 minutes, pressing down firmly, until done to your liking. Remove the beef from the wok and slice thinly.
  • Divide the noodles among the serving bowls, ladle the stock over them and top with the beef. Sprinkle over the fried shallots and the chilli flakes.
  • Serve immediately, accompanied by the beansprouts, coriander leaves and lime wedges, which can be added according to taste.


  • 3 fresh green chillies, seeded and chopped
  • 2 tablespoon sweet chilli sauce
  • 2 tablespoon coriander seeds, crushed
  • 4 garlic cloves, crushed
  • 150 ml sesame oil
  • 500 grams piece of sirloin steak

  • 1.5 litres strong beef stock, hot
  • 4 teaspoon chilli flakes  
  • 100 grams bean sprouts
  • 5 tablespoon fresh coriander leaves
  • 2 lime, cut into wedges
