Preparation Method :

  • To make the spice paste, grind all the ingredients together in a large mortar and pestle or spice grinder. Set aside.
  • Put the noodles in a large bowl, cover with boiling water and leave to stand for 3 minutes or according to packet instructions. Drain well.
  • Heat the oil in a wok and add the spice paste. Stir-fry until fragrant. Add the beans and courgettes and stir-fry over a moderate heat for 1 minute.
  • Add the coconut milk and bring to a gentle boil. Stir in the noodles and spinach. Sprinkle in the lime juice, basil, coriander and mint. Serve immediately.


  • 250 grams flat rice noodles
  • 2 tablespoon sesame oil
  • 100 grams French beans, blanched
  • 4 courgettes, diced
  • 300 ml coconut milk
  • 150 grams Thai spinach, or ordinary spinach
  • Juice of 1 lime
  • 4 tablespoon shredded fresh basil
  • 2 tablespoon chopped fresh coriander
  • 2 tablespoon chopped fresh mint

For The Spice Paste

  • 1 inch piece galangal, chopped
  • 2 teaspoon coriander seeds
  • 1 teaspoon black peppercorns
  • 5 cloves
  • 2 stalk lemon grass, roughly chopped
  • 5 tablespoon chopped fresh coriander
  • 4 garlic cloves
  • 4 shallots, chopped
  • 8 fresh green chillies, seeded
  • 2 teaspoon shrimp paste
  • 4 kaffir lime leaves
