Preparation Method :

  • Grind together the lime leaves, lemon grass, red chillies, garlic, cloves and coriander seeds in a mortar and pestle or spice grinder, to make a paste.
  • Transfer to a small bowl and stir in the tamarind, brown sugar, turmeric and ground cinnamon.
  • Put the noodles in a large bowl and cover with boiling water. Leave to stand for 3 minutes or according to packet instructions. Drain well.
  • Heat the oil in a wok or large open pan, add the shallots and cook over a low heat for 10 minutes or until they are soft. Increase the heat, add the ginger and galangal, and stir-fry for 1 minute.
  • Add the spice paste and stir-fry until fragrant.
  • Add the lime juice and noodles and cook for 5 minutes, using two spoons to lift and stir so that the noodles are evenly coated.
  • Transfer to a serving dish and sprinkle with the peanuts. Serve immediately.


  • 4 kaffir lime leaves, finely shredded
  • 1 stalk lemon grass, finely chopped
  • 5 fresh red chillies, chopped
  • 4 garlic cloves, roughly chopped
  • 4 cloves
  • 4 teaspoon coriander seeds
  • 1 teaspoon tamarind pulp
  • 4 teaspoon soft brown sugar
  • 4 teaspoon turmeric
  • 2 teaspoon ground cinnamon
  • 250 grams egg thread noodles
  • 5 tablespoon sesame oil
  • 5 shallots, sliced
  • 1 inch piece root ginger, grated
  • 2 inch piece galangal, grated
  • Juice of 1 lime
  • 4 tablespoon roughly chopped natural peanuts, roasted
  • Soy sauce, to serve
