Preparation Method :

  • Soak the konbu for 15 minutes in warm water to cover. Drain and shred finely. Blanch the beans in boiling water for 1 minute. Refresh and drain. Set aside.
  • Pour boiling water over the noodles and leave to stand for 2 minutes or according to packet instructions. Drain.
  • Heat the stock without boiling and stir in the miso, sesame oil, mirin, konbu and chilli flakes to taste. Season well. Bring to a gentle simmer.
  • Heat the sunflower oil in a wok or large open pan over a high heat and stir-fry the beef and beans for 1 minute or until the beef is sealed.
  • Divide the noodles among the serving bowls and ladle the miso stock over them. Top with the stir-fried beef and beans, followed by the watercress, spring onions and shredded pickled ginger.
  • Serve immediately, accompanied by wasabi paste to be added according to personal taste.


  • 2 piece of konbu
  • 100 grams French beans, halved
  • 500 grams ramen noodles
  • 2 litre strong beef stock
  • 4 tablespoon miso paste
  • 3 teaspoon sesame oil
  • 2 tablespoon mirin
  • Chilli flakes to taste
  • Salt and freshly ground black pepper
  • 2 tablespoon sesame oil
  • 300 grams topside beef, thinly sliced across the grain
  • 100 grams watercress
  • 6 spring onions, finely sliced
  • 2 tablespoon shredded pickled ginger wasabi paste, to serve
