Preparation Method :

  • Put the mooli, ginger and spring onion in three small serving bowls.
  • Bring the stock to the boil in a saucepan and blanch the beans for 2 minutes. Remove with a slotted spoon and set aside.
  • Blanch the carrot matchsticks for 1 minute only, remove with a slotted spoon and set aside. Flavour the stock with the mushroom ketchup.
  • Cook the noodles in plenty of boiling water according to packet instructions, then drain.
  • Pile the noodles in the serving bowls. Divide the beans, carrot, tofu cubes and watercress among the bowls.
  • Ladle on the hot stock, and serve immediately, accompanied by the spring onion, ginger, mooli and soy sauce to be added according to personal taste.


  • 2 inch piece mooli, finely shredded
  • 1 inch piece root ginger, shredded
  • 2 spring onions, finely sliced
  • 2 litres vegetable stock
  • 100 grams French beans
  • 2 carrots cut into matchsticks     
  • 2 tablespoon mushroom ketchup
  • 500 grams ramen noodles
  • 200 grams firm tofu, cubed
  • 100 grams watercress
  • Soy sauce, to serve
