Preparation Method :

  • Cut the tomato in half and grill (broil) skin-side-up until soft and quite blackened on the surface. Remove the skin and chop the flesh.
  • Pound the basil in a mortar with a pestle, then add the garlic and nuts and pound again. Add the tomato and pound again, then the cheese.
  • When all is smooth, add the oil drop by drop, as if making a mayonnaise, pounding constantly.
  • Pour the sauce over the noodles, toss until the pasta strands are coated and serve at once.


  • 2 large ripe tomatos
  • 80 gram chopped fresh basil
  • 4 cloves garlic, crushed
  • 8 tablespoons pine kernels
  • 100 gram grated Parmesan cheese
  • 300 ml Cooking oil
  • 400 gram freshly cooked ribbon noodles (tagliatelle)
