SICHUAN SPICED NOODLES

Preparation Method :

  • Place the Sichuan peppercorns, ginger, star anise, cinnamon, cloves and spring onions in a blender, pestle and mortar or spice grinder and grind to a rough paste.
  • Transfer to a bowl and add the honey, soy sauce, sherry, sesame oil, sunflower oil, lime juice, vinegar and sugar. Stir in the chopped coriander.
  • Put the noodles in a large bowl and cover with boiling water to cover. Leave to stand for 5 minutes or according to packet instructions, then drain well.
  • Heat a wok or large open pan and add the spice paste. Stir-fry until fragrant. Add the noodles and use two spoons to lift and stir the noodles until they are evenly coated in sauce and hot through. Remove to a warmed serving platter.
  • Stir-fry the greens in the pan juices, and spoon over the noodles. Serve immediately.

INGREDIENTS

  • 2 tablespoon Sichuan peppercorns
  • 100 grams root ginger, roughly chopped
  • 4 star anise seeds
  • 1 teaspoon ground cinnamon
  • 5 cloves               
  • 4 spring onions, finely chopped
  • 3 tablespoon honey
  • 5 tablespoon light soy sauce
  • 1 tablespoon dry sherry               
  • 3 tablespoon sesame oil
  • Juice of 1 lime
  • 2 tablespoon rice vinegar or cider vinegar
  • Pinch of sugar
  • 100 grams fresh coriander, chopped
  • 250 grams medium egg noodles
  • 300 grams mustard greens or other Chinese greens
