Preparation Method :

  • In a large bowl combine the udon noodles, spring onions, beansprouts, shiitake mushrooms and red pepper.
  • In a small bowl combine the garlic, ginger, mirin, chilli oil, soy sauce, sugar and 1 teaspoon of the sunflower oil.
  • Heat the remaining oil in a wok or large open pan. When it is very hot, add the noodle mixture and stir-fry over a high heat for 3 minutes.
  • Add the soy mixture and use two spoons to lift and stir so that the noodles and vegetables are coated with the sauce.
  • Transfer to a heated serving dish, garnish with the spring onion, pepper and pickle, and serve immediately.


  • 750 grams fresh udon noodles
  • 5 spring onions, roughly chopped
  • 200 grams bean sprouts
  • 200 grams shiitake mushrooms, sliced
  • 2 red pepper, chopped
  • 2 garlic clove, crushed
  • 1 inch piece root ginger, grated
  • 2 tablespoon mirin         
  • 2 teaspoon chilli oil         
  • 2 tablespoon light soy sauce
  • Pinch of sugar
  • 5 teaspoon sesame oil

To Garnish

  • Spring onion, finely sliced
  • Japanese seven-pepper spice or lemon pepper
  • Pickled ginger or radish
