Preparation Method :

  • First, make the teriyaki sauce. Put the mirin or sherry in a saucepan, bring to the boil and simmer for 2 minutes or until reduced by half. Add the soy sauce and stock. Remove from the heat.
  • Preheat the grill to very hot, and line the grill pan with foil. Arrange the salmon fillets in the pan and brush with the teriyaki sauce. Grill for 5 minutes on each side, basting often with the sauce.
  • Meanwhile, cook the noodles in plenty of boiling water for 5 minutes or according to packet instructions. Drain and stir in the sesame oil, chives and spring onions.
  • Serve the salmon on a bed of piping hot noodles, accompanied by any remaining teriyaki sauce.


  • 100 ml mirin or medium dry sherry
  • 100 ml light soy sauce
  • 100 ml chicken stock      
  • 6 salmon fillets
  • 250 grams medium egg noodles               
  • 4 tablespoon sesame oil
  • 4 tablespoon finely chopped fresh chives            
  • 5 spring onions, finely chopped
