YELLOW PEPPER NOODLES

Preparation Method :

  • Preheat the oven to 200°C/400°F/Gas 6. Cut the yellow peppers in half lengthways and remove the seeds and white ribs.
  • Put the pepper halves on a baking tray with the garlic head and bake for 30 minutes. Squeeze the garlic; if it does not yield easily to pressure, return to the oven for a further 20 minutes or so.
  • Put the peppers and garlic into a plastic bag, or cover with damp kitchen paper, and set aside to cool.
  • When cool enough to handle, peel the peppers and set aside. Cut the top off the garlic to expose the soft cloves.
  • Squeeze the cloves into a food processor or bowl, and blend or mash together with the yellow peppers. Stir in the olive oil and season generously.
  • Heat the yellow pepper sauce through gently in a small saucepan or in the microwave.
  • Meanwhile, cook the noodles in plenty of boiling water according to packet instructions. Drain.
  • To serve, toss the noodles with the sauce and garnish with red basil.

  • Salt and freshly ground black pepper
  • 500 grams soba noodles
  • Fresh red basil, to garnish
