FETTUCCINE, COURGETTES AND CORNED BEEF

Preparation Method :

  • Cook fettuccine in boiling salted water. Drain
  • Heat oil in a frying pan and sauté onions, garlic, courgettes and red pepper for about 3 - 5 minutes, keep stirring.
  • Add the tomatoes, red chili and salt to taste and cook over a very low heat for another 10 minutes. Add beef and heat through.
  • Spoon the sauce over the hot pasta and toss to combine. Serve hot.

INGREDIENTS

  • 250 grams courgettes, cut into thin strips
  • 1 red pepper, peeled and cut into strips
  • 350 grams, fettuccine
  • 450 grams, canned tomatoes or 2 tomatoes, peeled, seeded and chopped
  • 1 tablespoon Cooking oil
  • 2 onions, chopped
  • 2 cloves garlic, crushed
  • ½ teaspoon dried red chilli, crushed
  • 500 grams corned beef, cut into shoestrings
  • Salt to taste
