Preparation Method :

  • The Sauce: Melt the butter in a saucepan, add the flour and stir constantly.
  • Add the milk, salt, pepper, chilli, Worcestershire sauce and mustard powder.
  • Bring to the boil. Simmer to low flame and cook gently for about 2 minutes.
  • Melt a little butter in a saucepan and toss the pasta evenly to coat.
  • Stir the macaroni into the sauce until evenly coated. Mix together the three cheeses, reserve spoonful for sprinkling.
  • Add the remaining cheese to the sauce, mix well and pour into a buttered ovenproof dish.
  • Sprinkle with the reserved cheese and the breadcrumbs.
  • Place the dish under a preheated moderate grill and cook for about 5-7 minutes or until the top is golden brown.
  • Garnish with parsley and serve immediately with slices of mixed peppers.


  • 250 grams wholewheat macaroni, cook according to the packet instructions and drained
  • 1 litre water
  • 1 tablespoon Cooking oil
  • 1 teaspoon salt
  • Parsley sprigs, to garnish
  • 75 grams of sliced Mixed peppers, to serve

Cheese Sauce

  • 150 grams Gruyere cheese, grated
  • 50 grams mozzarella cheese, grated
  • 50 grams freshly grated Parmesan cheese
  • 750 ml milk
  • 45 grams butter or margarine
  • 50 grams plain flour
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon salt
  • Pinch of pepper
  • ¼ teaspoon mustard powder
  • 15 grams fresh white breadcrumbs
  • Pinch of chili powder
