Preparation Method :

  • Heat butter and oil in a large frying pan.
  • Add onion and garlic and stir over low heat until onion is tender. Add prosciutto to pan and fry until crisp.
  • Add chicken and cook over medium heat atleast for 4 minutes. Add mushrooms and cook for another 2 minutes.
  • Add tomato and tomato paste and stir until combined. Add wine and stir. Bring to the boil.
  • Reduce heat and simmer until liquid is reduced by half. Stir in cream, salt and pepper. Bring to the boil.
  • Reduce heat and simmer until sauce begins to thicken.
  • While sauce is cooking, add penne to a large pan of rapidly boiling water and cook until just tender. Drain well and return to pan.
  • Add sauce to pasta and toss to combine. Serve immediately, sprinkled with parmesan.


  • 35 grams butter or margarine 
  • 1 tablespoon Cooking oil
  • 1 onion, sliced 
  • 1 clove garlic, crushed 
  • 60 grams prosciutto, chopped 
  • 250 grams chicken thigh fillets, trimmed and sliced 
  • 150 grams mushrooms, sliced 
  • 1 tomato, peeled, halved and sliced
  • 1 tablespoon tomato paste
  • 100 ml white wine
  • 200 ml thickened or pouring cream 
  • Freshly ground black Pepper and Salt to taste
  • 500 grams penne
  • 20 grams freshly grated parmesan cheese, for serving
