Preparation Method :

  • Boil water in a large saucepan. Blanch the vegetables in it for about 5-7 minutes, then take them out and dip them in iced water, then shake off the excess liquid.
  • Put the vegetables into a glass jar together with the bay leaves, the pepper, pimento seeds and mustard seeds.
  • Boil the vinegar together with half a cup of water and the sugar, pour it over the mixed pickles. Put a lid on the glass jar immediately and store in a cool place.
  • Drain off the liquid after 3-4 days, boil it and pour over the mixed pickles again. The mixed pickles can be stored in a cool place for 5-6 months.


  • 6 small gherkins, brushed, soaked in salt water for about 10 -12 hours, drained and rinsed
  • 100 grams carrots, peeled and sliced
  • 500 ml vinegar
  • ½ small cauliflower, washed and separate its florets
  • 100 grams baby corn, washed
  • 1 red pepper, washed and cut into strips
  • 100 grams pearl onions, peeled
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 5-6 pimento seeds
  • 2 teaspoon mustard seeds
  • 50 grams sugar
  • Salt, to taste
