PICKLED EGGS

Preparation Method :

  • Boil 1 litre of water with the salt, the bay leaves, the peppercorns, the coriander seeds and the juniper berry.
  • Add the onion rings to the cooled down brine.
  • Hard-boil the eggs together with the onion peelings and the rest of the onion.
  • Then quench the eggs and tap lightly on their shells. Add the eggs to the brine and let them soak in it at least for a day.
  • Spice the eggs either with salt, pepper and mustard or vinegar and oil.

INGREDIENTS

  • 9-10 eggs
  • 100 grams salt
  • 2 onions, peeled and cut into rings
  • 2-3 bay leaves
  • 1 litre water
  • 9-10 peppercorns
  • 10-12 coriander seeds
  • 1 juniper berry
