Preparation Method :

  • The Topping: Heat oil and stir-fry onion, capsicum and garlic gently for about 3-5 minutes or until onion turn soft and lightly browned. Remove from heat.
  • Stir in the mushrooms with oregano and vinegar. Adjust seasoning with salt and pepper.
  • Pizza Base: Sift flour and salt into a large bowl. Add butter and rub until mixture resembles breadcrumbs.
  • Add mashed potatoes and knead lightly until smooth. Roll out dough and cut into a disc. Refrigerate until ready to use.
  • Place the pizza base on a greased baking tray. Spread with tomato puree followed by topping. Sprinkle grated cheese on top.
  • Bake in a preheated oven at 190°C / 375°F / Gas mark 5 for 20-22 minutes or until base is firm. Sprinkle more grated cheese on top before serving.


  • 250 grams mashed potatoes
  • 100 grams self-raising flour
  • 50 grams butter
  • 3 teaspoon tomato puree
  • 2 tablespoon grated cheddar cheese
  • Salt to taste


  • 150 grams button mushrooms, wiped and sliced
  • 1 onion, peeled and sliced
  • 1 red bell pepper, pith removed and sliced
  • 1 tablespoon Cooking oil
  • 2 teaspoon malt vinegar
  • 1 clove garlic, peeled and crushed
  • A pinch Oregano
  • Ground black pepper and salt to taste
