Preparation Method :

  • To make the pizza base, sift together the flour, yeast and salt. Stir in half of the oil and 150 ml (¼ pint) hand-hot water. Mix to form a soft dough, then knead on a lightly floured surface for 4-5 minutes, or until smooth and elastic.
  • Place the dough in a clean, lightly oiled bowl. Cover with a damp cloth and leave to prove in a warm place for 30 minutes or until doubled in size.
  • Meanwhile, make the tomato sauce. Place all the ingredients in a medium pan, bring to the boil and simmer gently for 10 minutes.
  • Remove the dough from the bowl and knead again on a lightly floured surface for 4-5 minutes. Roll into a 25 cm (10-inch) round. Place on a lightly oiled baking sheet, brush with a little oil and spread over the tomato sauce.
  • Scatter over all the topping ingredients, drizzle over any remaining oil and cook for 15-20 minutes on the floor of the oven, until the dough is golden and crispy.


For the pizza base

  • 175 grams (6 oz) strong plain flour
  • 7 grams sachet of easy-blend dried yeast
  • A pinch of salt 
  • 2 teaspoons olive oil 

For the tomato sauce

  • 1 onion, sliced finely
  • 2 garlic cloves, crushed
  • 1 teaspoon dried mixed herbs 
  • 400 grams can of chopped tomatoes
  • 2 tablespoons tomato puree 
  • Salt and freshly ground black pepper 

For the topping

  • 200 grams can of tuna in water, drained
  • 125 grams (4 ½ oz) packet of mixed seafood cocktail 
  • 2 tablespoons capers, drained
  • 8 black olives
  • A handful of fresh basil leaves
