Preparation Method :

  • Drain the soaked beans, rinse and then cover with fresh water. Bring to the boil, boil for 10 minutes, then simmer for 1 to 1¼ hours or until tender. Drain, reserving the liquid.
  • Place the beans in a deep, greased casserole. Mix the remaining ingredients with just enough of the reserved cooking liquid to cover the beans.
  • Cover tightly with a lid or foil and cook in a preheated cool oven (150°C/300°F, Gas Mark 2) for 7 to 8 hours, until the beans are very tender and have absorbed the flavorings.
  • Stir occasionally while they cook, adding a little more bean liquid as necessary. Leave uncovered for the last hour of cooking.
  • Serve hot from the casserole.


  • 500 grams dried haricot beans, soaked overnight
  • 4 onions, chopped
  • 200 grams salt pork, cut into small cubes
  • 2 tablespoon brown sugar
  • 2 tablespoon black treacle
  • 4 tablespoons tomato puree
  • 2 tablespoon vinegar
  • 2 teaspoon dry mustard 
  • Salt and freshly ground pepper
