Preparation Method :

  • Put the washed and drained spinach in a bowl with celery, garlic, ham and parsley. Remove leaves from thyme and add to bowl with pepper to taste. Mix well.
  • Heat the butter until frothy in heavy-based pan, add the flour and cook for 1 minute. Gradually stir in the milk and bring slowly to the boil, stirring constantly.
  • Add a generous pinch of nutmeg and salt and pepper to taste, and then simmer for 3 to 4 minutes. Remove from heat.
  • Mix the egg yolk and cream together and stir slowly into the sauce, then fold in the vegetable mixture.
  • Pour into a buttered gratin dish, level the surface, cover and bake in a preheated moderate oven (160°C/325°F, Gas Mark 3) for 20 to 25 minutes.
  • Serve hot, straight from the dish.
