Preparation Method :

  • Cook the spinach in a boiling water until wilted, 5 minutes. Drain, chop coarsely, and set aside. Heat the oil in a large frying pan over high heat.
  • Add the pork and sauté until browned, 5 minutes. Season with salt and pepper. Set aside. Sauté the chorizo in the pan until crisp, 5 minutes.
  • Add the onions, bell pepper, tomatoes, and garlic and simmer for 20 minutes.
  • Add the rice, stirring to coat. Season with salt, pepper, and paprika. Add the chilli, stock, and saffron liquid.
  • Simmer for 15 minutes, until the stock is absorbed. Stir in the pork and spinach. Remove from the heat and let rest for 5 minutes. Serve hot. 


  • 750 grams spinach
  • 100 ml sesame oil
  • 500 grams pork fillet, cut into bite-size pieces
  • Salt and freshly ground black pepper
  • 300 grams spicy chorizo, sliced
  • 4 large red onions, chopped
  • 2 green bell pepper (capsicum) and chopped
  • 4 large tomatoes, sliced
  • 5 large cloves garlic, sliced
  • 500 grams rice
  • 4 teaspoons sweet paprika
  • 2 dried chilli, crumbled
  • 1 litre chicken stock
  • Pinch of saffron threads
