Preparation Method :

  • Wipe the ribs with damp kitchen paper towels and place on a rack in a shallow roasting pan. Cook in a preheated moderate oven (180°C/350°F, Gas Mark 4) for 45 minutes.
  • Pour off the fat and place the ribs in the pan.
  • Mix the remaining ingredients together, pour over the ribs and allow to marinate for about 1 hour or refrigerate overnight. Turn the ribs several times.
  • Cook in preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 25 minutes. Cut into serving pieces and eat with the fingers.


  • 1½ kilogram pork spareribs in one piece
  • 8 tablespoons soy sauce 
  • 2 cloves garlic, crushed
  • 2 tablespoons honey 
  • 2 tablespoons dry sherry
  • 2 tablespoons tomato ketchup
