Preparation Method :

  • Put all the ingredients, except the red cabbage, into a large flameproof casserole.
  • Bring to the boil, lower the heat, cover and simmer for about 1 hours or until the pork has become tender.
  • Add the cabbage, increase the heat and cook for a further 5 minutes.
  • Serve hot.


  • 2 bouquet garni
  • 200 grams peeled chestnuts
  • 1 kilogram boned pork shoulder, trimmed of fat
  • 2 large potato, peeled and quartered
  • 4 medium onions, peeled and quartered
  • 8 medium carrots, scraped
  • 2 tablespoon tomato puree
  • 4 tablespoons white wine vinegar
  • 1 liter vegetable stock
  • Salt
  • Freshly ground black pepper
  • 4 bay leaves
  • 500 grams red cabbage, thinly sliced
