Preparation Method :

  • Put the onion into a pan with the garlic, vinegar, Worcestershire sauce, brown sugar, lemon rind and juice and chili powder.
  • Add 2 teaspoon of salt and the water and bring to the boil.
  • Simmer gently, uncovered, for 15 minutes, stirring occasionally, or until the onion is tender and the sauce slightly thickened.
  • Meanwhile, trim the chops, season lightly and grill (broil) under a preheated moderate grill (broiler) for about 8 to 10 minutes on each side or until cooked through and well browned.
  • Serve with the sauce spooned over and garnished with orange or lemon slices. 


  • 2 onion, peeled and chopped
  • 2 garlic clove, crushed
  • 3 tablespoons tarragon vinegar
  • 4 teaspoons Worcestershire sauce
  • 50 grams brown sugar
  • Grated rind and juice of 1 lemon 
  • Large pinch of chili powder 
  • Salt and pepper 
  • 10 tablespoons water
  • 4 large pork chops
  • Orange or lemon slices to garnish
