PORK CHOPS WITH PEPPERCORNS

Preparation Method :
- Season the chops with salt and pepper. Heat the oil in a large frying pan and fry the chops for about 10 minutes on each side, until golden brown and cooked through.
- Transfer to a warmed serving plate and keep warm.
- Pour off any excess fat from the pan. Add the peppercorns and fry for a few seconds, and then add the mustard and cream.
- Stir well to pick up the brown sediment on the bottom of the pan, and continue cooking gently until the sauce thickens.
- Add salt to taste and spoon the sauce over the pork.
- Garnish with parsley and serve with French fries and whole green beans.

- 2 tablespoon oil
SAUCE
- 4 teaspoons canned green peppercorns, drained
- 4 teaspoons Dijon mustard
- 250 ml single cream chopped parsley to garnish
