Preparation Method :

  • Snip the fat on the chops to prevent curling and cook under a preheated moderate grill (broiler) for 10 to 12 minutes on each side.
  • Melt the butter in a pan and sauté the onion for 5 minutes. Stir in the flour and cook for 1 minute.
  • Remove from the heat and gradually add the stock, ketchup and brown sauce. Heat, stirring, until the sauce comes to the boil.
  • Add the gherkins and salt and pepper to taste and heat through for 2 minutes.
  • Place the chops on warmed plates and spoon the sauce over.
  • Serve with rice and green vegetables.


  • 4 pork chops 
  • 30 grams butter
  • 2 small onion, chopped
  • 4 teaspoons plain flour 
  • 500 ml stock
  • 4 teaspoons tomato ketchup 
  • 4 teaspoons brown sauce 
  • 4 midget gherkins, sliced 
  • Salt and freshly ground pepper
