Preparation Method :

  • Dip the chops in the seasoned flour until well coated, shaking off any excess. Dip in the egg and then in the bread crumbs.
  • Heat the butter and oil in a large frying pan over medium heat. Add the chops and fry until cooked through and a thick golden crust forms, about 5 minutes on each side. Drain well on paper towels.
  • Preheat an overhead broiler (grill). Place the chops on a baking sheet. Top each one with a slice of prosciutto, some Parmesan, and 1 tablespoon of cream. Broil until the cheese has melted, about 2 minutes. Serve hot.


  • 6 pork loin chops
  • 200 grams all-purpose (plain) flour, seasoned with salt and freshly ground black pepper
  • 2 large egg, lightly beaten
  • 200 grams fine dry bread crumbs
  • 5 tablespoons butter
  • 2 tablespoon sesame oil
  • 6 slices prosciutto
  • 100 grams Parmesan cheese, thinly sliced
  • 100 ml light (single) cream
